Farm to School’s January Veggie of the Month: Turnip Greens!

turnipThis month, have a taste of the leafy top of this familiar root vegetable. Turnip greens are remarkable for their high calcium content, which also gives them a noticeably bitter taste.

Turnip greens also contain healthy glucosinolate, outscoring similar veggies like cabbage and kale. Plants with high glucosinolates are currently under research as cancer inhibitors.

1 pound of turnip greens, washed and chopped
2 garlic cloves, minced
½ of a yellow onion, diced
1 tablespoon of olive oil
Juice from 1 lemon

1. Heat olive oil in large saucepan for 2-3 minutes. Add onion and garlic. Saute for 3-5 minutes.
2. Add the turnip greens. Saute for 5-­‐8 minutes. Stir frequently.
3. Stir in lemon juice and serve.
4. Enjoy!
